Lacey’s Treats: Football Finger Foods

I am no foodie… heck the boyfriend won’t even let me in the kitchen. Really. I am that bad. But all of the sudden I had an itch to pull a Cupcakes and Cashmere and give you all some simple snacks to make and munch on while watching football this weekend. Yay NFL and College Football is now back!

Que one of my favorite people in the universe, fellow Florida State Nole  (Go Noles!) and coffee blogger extraordinaire, Megan! Before I pass you off to Megan – I just want to say that if you love your coffee, want some amazing tips and tricks and like simple finger food how-tos – Megan’s Cup of Mo is a MUST for your Google Reader! I normally read it with a Starbucks in hand.

College football 2011 is finally upon us.  Going to FSU with Lacey, I share her love of all things garnet and gold, the Seminoles and Saturdays in the fall.  Combine that with my love of cooking and entertaining and I’ve got some simple and delicious recipes for you to try out when tailgating or entertaining at home this football season.

The Main Event:

Wonton Pizza Bites– Try these with chicken sausage and you have an easy and light snack
Chicken Nachos– this is a favorite around our house, it gets requested quite frequently, and what is more stadium food than nachos??
1 baked and shredded chicken breast
1 jar salsa
1 bag of your favorite tortilla chips
2 cups cheddar cheese
1 can black beans, drained
Arrange chips on a baking sheet, cover with half of the cheddar cheese, place under a broiler set to high.  After cheese melts, remove from oven.  Mix shredded chicken with half jar of salsa, sprinkle over chips.  Sprinkle black beans over chips, top with remaining cheese.  Place chips back under broiler and let cheese melt.  Remove from oven and enjoy with salsa, guacamole, jalapenos, and any other toppings you desire!
Mexican Corn Dip– We serve this at most family reunions, you literally throw all of the ingredients in one dish and bake.  Done.  Then you won’t want to let anyone else eat it!
1 can Mexican corn, drained
1 can mozarella cheese
1 cup mayonnaise
1/2 Parmesan cheese
minced fresh jalapeno to taste
Preheat oven to 350 degrees F.  Mix all together and bake for 30 minutes.  Serve immediately with tortilla chips.

Apple Nachos– easy to make, you won’t be able to resist them. You can go the cheaters route here too, if you live near a Rocky Mountain Candy Company, just go pick up a pre-made apple :)
Fruit Pizza– take a package of sugar cookies, slice into rounds and spread out in the bottom of a pizza pan.  Bake according to package directions.  For sauce: mix together a package of softened cream cheese (I use non fat) with 1/3 cup sugar and 1 tsp vanilla. Spread on cookie crust.  Top with an assortment of your favorite, in-season fruit.
Thirst Quenchers:
Bud Light Lime (that is a suggestion from the boyfriend that goes out to all of you who will be hosting dudes)…mabye with a shot of tequila and a lime wedge??
Prosecco Pops – All fruit popsicles served with a proseco topping
Sangria (my go to party drink!)
1 bottle dry-ish red wine)
6oz can pineapple juice
1/4 cup brandy
1/4 orange liqueur
12 oz can sprite
Sweetener/Sugar if needed
Assortment of cut up fruit
Mix all ingredients in a pitcher.  Let sit in the fridge for about 30 minutes.  Serve in wine glasses over ice.
